The perfect side dish to any Mexican recipe: Easy Mexican Salsa Rice!
I love that this recipe can be made in the microwave – it’s a great recipe to share with your favorite college student or even someone who is just learning how to cook.
Ingredients in Easy Mexican Salsa Rice:
- 2cupsinstant brown rice
- 2cupswater
- 1envelopeenchilada sauce mix(or you could use taco seasoning)
- 1cupsalsa(I used mild so my kids would eat it- go as hot as you want!)
- 1(4oz) cangreen chilis
How to make this Mexican Salsa Rice side dish:
- Combine all ingredients together in a microwaveable bowl. Microwave on high for 8-9 minutes, or until rice is tender.
- Let sit for 3-5 minutes and it will soak up most of the liquid in the bowl. Fluff with a fork and serve.

A super easy way to add some spice to your rice

Ingredients
- 2 cups instant brown rice
- 2 cups water
- 1 envelope enchilada sauce mix (or you could use taco seasoning)
- 1 cup salsa (I used mild so my kids would eat it- go as hot as you want!)
- 1 (4oz) can green chilis
Instructions
Combine all ingredients together in a microwaveable bowl. Microwave on high for 8-9 minutes, or until rice is tender.

can you use real rice? i'm trying to think of how you would substitute with the cooking of the real rice...any ideas?

Hmmm . . . to be honest, I am not sure! Unfortunately I don't have much experience cooking with real rice . . . we just always use instant! Sorry that I am not much help!

Genius! We had tonight with enchiladas. It was fantastic! It would also make a good filling to go in burritos. We will definitely make it again!

We had a lot of rice leftover, so I made bean and rice burritos. I added a can of drained black beans and some shredded cheese. I rolled in a flour tortilla, and then I grilled the tortilla on my griddle. It was delicious! It made a very filling, inexpensive, meatless meal too!

Just prepare your rice according to package directions, maybe using chicken broth instead of water, and when rice is cooked, stir in other ingredients, heat through and serve. Hope this helps! :-)

Hi! Can you tell me they brand and size of the bowl you use in the microwave? I have small glass ones I throw in for leftovers but I'm terrified to use something dangerous in their. I'm from Iowa we have a Walmart but not too much selection. Oh it has to be cheap we can't afford much my husbands not working many hours and about to get laid off. Thank you!

Any mixing bowl should work. We use a pyrex glass bowl and it works fine. Just has to be big enough to hold all of the ingredients and be able to stir it gently.

Can I make this with white instant rice instead of brown? Does it make a difference?

You can use white or brown rice with this recipe.

Dump it all in the instant pot for 25 minutes with a NR and you will soon have yummy rice. And if you start with a pound of browned ground beef or chicken and add a can of corn, it will be a complete meal!

This has been on my "go-to" list for a long time, although I typically just make it on the stove. I often add a can of chili beans, and we use it as a meatless filling for tacos, burritos, or enchiladas.
